KOAAHs ultimate avocado and egg on sourdough toast

Are you ready to elevate your avocado toast game? KOAAH's ultimate avocado egg on toast is about to become your new favourite dish. Whether it's a hearty breakfast, a post-workout snack, or a quick bite, this delicious treat takes less than 10 minutes to whip up and is brimming with flavour and nutrients. It’s packed with healthy fats, protein, fibre, and essential vitamins and minerals, making it a nutritious choice at any time of day.


Here’s what you’ll need:

  • 2 slices of any bread of your choice (we used sourdough)

  • 1 ripe avocado

  • 1/2 fresh lemon juice, or to preference

  • A handful of spinach, roughly chopped or torn

  • 1/2 of a spring onion, finely chopped

  • 2 eggs

  • Chilli flakes, to preference

  • Salt, to taste

  • Black pepper, to taste


Directions:

  1. Boil the Eggs: Place your eggs into a saucepan and cover them with cold water. Bring the water to a boil add your eggs, let the eggs cook for 3-4 minutes for soft-boiled eggs. Adjust the time if you prefer them firmer. Once done, transfer the eggs to a bowl of ice water to cool. Tip: Starting eggs in cold water and gradually heating them helps prevent cracking from sudden temperature changes.

  2. Toast the Bread: While the eggs are cooking, toast your bread slices until they’re golden and crispy. This will provide a perfect base for your avocado and egg mixture.

  3. Prepare the Avocado: Scoop out the avocado into a bowl. Mash it with a fork to your desired texture—smooth or chunky. Season with a pinch of salt and pepper. Add the lemon juice, chilli flakes, spring onion, and the roughly torn spinach. Mix everything together.

  4. Add the Eggs: Peel the cooled eggs and add them to the avocado mixture. Gently mash the eggs into the avocado, leaving some chunks for texture. Taste and adjust the seasoning with more salt, pepper, or chili if needed.

  5. Assemble the Toast: Once the bread has cooled slightly, spread the avocado and egg mixture evenly over each slice.

  6. Garnish (Optional): For an extra touch, sprinkle with chopped herbs like cilantro or parsley, add a drizzle of olive oil, or crumble some feta cheese on top for added flavour.
